Crossing the Mediterranean in a dinghy was no easy decision for Tarik and Nisreen and their four children. They arrived in Samos in the middle of the night, wet and totally starving. There was a tiny shop open selling sliced meat. Tarik and his daughter Israa’ went there and bought tons of it with fresh tomatoes and buns. They made sandwiches and all sat together on the pavement, sheltered under a parked truck and munched them up.

Nine months after their arduous journey, in a complex of flats outside Cologne, this was the first recipe they cooked for us. This is in honor of Israa’s family and that day in Samos that they will never forget.
